Abstract

The main reasons for the decrease in the quality of grapes during storage are the change of fruit bunches from green to brown, the appearance of gray fungus (Botrytis cinerea) and the appearance of rot as a result of a decrease in moisture content in the bunches and grains after harvest [1]. Nowadays, grape guard sheets are used for long-term storage of table grape (vitis vinifera) in refrigerated warehouses or for the purpose to export to countries in different distances, while maintaining the hardness, color, taste, texture and a number of other quality indicators. This article discusses the usage of grape guard sheers on storage of fresh grapes in refrigerated warehouses to maintain the freshness, prevent the initial weight loss of grapes, rot, mold, and to ensure the hardness and durability of grape berries. Moreover, this paper analyzes occurrence of sulfur bleaching, taste disturbances and sulfur injury on stored grapes.
